En este artículo, después de indicar algunas pautas de acción teórica para el desarrollo de una semiótica de la gastronomía, proponemos un análisis de la nova cuina catalana. Esta nueva cocina -caracterizada por una experimentación desenfrenada que encuentra en Ferran Adrià a su máximo exponente internacional- resulta un interesante objeto de estudio semiótico. Al final del artículo se proponen algunas reflexiones sobre la nova cuina desde la perspectiva de las marcas. |

In this article, after indicating some theoretical inputs for the development of a semiotics of gastronomy, we propose an analysis of the Catalan nova cuina. This new gastronomy - characterized by a extreme experimentation internationally represented by Ferran Adrià - turns out to be an interesting object of semiotic study. At the end of the article we propose some refections about the nova cuina from the perspective of the brands. |
