Anàlisis de microrestes i residus d'origen vegetal en contextos arqueològics : _tòlits i midons

Abstract:	Amb aquest article pretenem exposar, d'una manera més accessible que la que podem trobar a la literatura relacionada amb aquest àmbit de la investigació, les dimensions d'estudi que poden oferir els anàlisis de midons i ~tòlits en contextos arqueològics. En cap cas aquest escrit és resultat d'una investigació pròpia ni te pretensions de genuïnitat o de representativitat bibliogrà~ca del tema. Simplement aspirem a posar a l'abast de les persones que comencen a iniciar-se en el món de l'Arqueologia una eina que, com veurem, ha demostrat ser útil i ~able. Amb aquest objectiu començarem per presentar quines són les característiques físiques i químiques d'aquestes biomolècules així com les seves funcions en els organismes vius. Seguidament ens centrarem en citar els contextos en els que l'Arqueologia pot fer ús d'aquest tipus d'anàlisi, ~xant-nos en els diferents suports materials en els que podem trobar aquest tipus de residu. En última instància valorarem els pros i contres de les maneres en què s'ha dut a terme la utilització d'aquest tipus d'anàlisis en la creació de coneixement històric.
Abstract:	The aim of this paper is to expose in an accessible way the dimensions of study that can offer the analysis of starch grains and phytoliths in archaeological contexts. With these intention we will start exposing the main physical and chemical characteristics of these biomolecules and their function in living beings. Continuously,we will focus our atention on mentioning the contexts in which Archaeology can use this type of analysis,attending to the different supports in which we can gnd this kind of residue. Finally,we will evaluate the pros and cons of the ways in which the analysis of phyto and starch grains have been done in the process of generating historical knowledge.
