A lo largo de los siglos, el aceite de oliva ha sido un alimento de gran importancia, acumulado un léxico especializado que, entre otras cosas, incluye el léxico especializado de la cata, que describe las sensaciones intersubjetivas que se perciben al degustarlo. The favourable circumstances of the protagonism of the olive tree and the olive oil in the Mediterranean culture encourage to carry out linguistic works related to the olive-growing domain. Throughout the centuries, olive oil has been an essential aliment, and has accumulated a specialized vocabulary that, among other things, includes the specialized lexicon of oil tasting, which describes the intersubjective sensations that are perceived when digusting this product.
