Dans cet article, l'auteure s'intéresse à l'élaboration d'une sémantique du goût dans le cadre d'une sémantique cognitive développée notamment par Lakoff (1987). La physiologie du goût nous apprend que le nombre d'images gustatives possibles est illimité (l'expérience individuelle d'une image sensorielle est ainsi incommunicable) et que le système gustatif est un système de reconnaissance de formes plutôt qu'un système de catégorisation; par conséquent, les catégories de goût ne peuvent qu'être des catégories de langage.
