Resumen:	L'expressió «gust de paisatge», si bé metafòrica, resumeix certa voluntat culinària sorgida a la nouvelle cuisine que portarà, a través del concepte d'autoria, a la noció del cuiner com a artista. En el present article es contextualitzaran els episodis pels que l'alta cuina es va anar aproximant conceptualment a l'entorn on es trobava i es procurarà entendre la rellevància del format del restaurant gastronòmic i els seus mecanismes tècnics en la formació d'una imatge artística d'aquest. Així, es comprendrà de quina manera el comensal està doblement perdut davant aquesta imatge, podent així assaborir el paisatge.
Resumen:	The expression «flavour of landscape», although metaphorical, summarizes a certain culinary will that arosed in the nouvelle cuisine. Through the concept of authorship, it will lead to the notion of the chef as an artist. In this article, the episodes that conceptually approached the haut cuisine to the environment where the restaurant was located will be contextualized. An attempt will be made to understand the relevance of the gastronomic restaurant's format and its technical mechanisms in the formation of an artistic image of it. Thus, it will be understood how the diner can possibly be doubly lost before said image, thus being able to savor the landscape.
