The official classification of carcasses in slaughterhouses economically values the quality of the carcass: conformation and degree of fat cover.
The objective of this collection is to offer professionals, technicians and students of related degrees, an instrument of consultation, for teaching and continuing education.
Based on communications presented to congresses and conferences, publications and photos of classified carcasses, the official classification of the European Union in cattle is presented and a photographic classification grid of equine carcasses is proposed.
