Abstract:	En el siguiente ensayo nos enfocamos en trabajar la cocina como un fenómeno social, que ofrece espacios rituales, valores míticos, estéticos, estésicos; al mismo tiempo proporciona segmentos de historia e identidad que, en su unión, hacen posible comprender la continuidad, la trascendencia, la evolución de una cultura determinada. Una de las coincidencias en las que convergen las distintas disciplinas, radica en observar al alimento en su transformación en platillo, como mecanismo eficaz para generar y dar forma a los significados. De esta forma se discutirá el fenómeno dentro de los debates recientes que han elaborado los estudios semióticos.
Abstract:	In the following essay we focus on working the kitchen as a social phenomenon, offering ritual spaces, mythical values, aesthetic, you, at the same time provides segments of history and identity in their marriage, they can understand the continuity, transcendence, evolution of a given culture. One of the matches in that different disciplines converge, lies in observing the food on your plate transformation, as an efective mechanism to generate and shape the meanings. In this way we will discuss the culinary phenomenon in recent discussions that have been developed from the semiotic studies.
